Ingredients:
1 lb ground beef
1 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
1 can diced tomatoes
4 cups beef broth
1 cup Rao’s Marinara sauce
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 cup ricotta cheese
1/4 cup grated parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1 cup shredded mozzarella cheese
Instructions:
Heat a large pot or dutch oven over medium heat. Add the ground beef and cook until browned, breaking up the meat with a spatula as it cooks. Drain any excess fat and set the beef aside.
In the same pot, add the olive oil and sauté the onions until softened, about 5 minutes. Add the garlic and cook for another 30 seconds.
Add the diced tomatoes, beef broth, Rao’s marinara sauce, dried basil, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 10-15 minutes.
In a small bowl, mix together the ricotta cheese, parmesan cheese, chopped parsley, and chopped basil.
Add the cooked ground beef back to the pot and stir to combine.
Ladle the soup into bowls and top each bowl with a dollop of the ricotta cheese mixture and a sprinkle of shredded mozzarella cheese.
Place the bowls under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
Serve hot and enjoy!
