Savory seasoned beef, sautéed onions and peppers, and gooey Monterey Jack cheese rolled into crispy, golden, cheesy wraps. Perfect for a quick low-carb lunch or dinner!
🛒 Ingredients
- 2 cups Monterey Jack cheese, shredded
- 16 oz (450 g) lean ground beef
- ½ medium onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp Italian seasoning
- 1 tbsp olive oil, if needed
- 2 tbsp fresh parsley, chopped, for garnish
👩🍳 Instructions
- Cook the beef: Heat a large skillet over medium heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it browns. Drain excess grease if necessary.
- Add the vegetables: Add sliced onion and bell pepper. Cook for 4–5 minutes, until softened.
- Season: Stir in garlic powder, onion powder, salt, pepper, and Italian seasoning. Cook for another 1–2 minutes. Remove from heat.
- Make the cheese sheets: Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper. Divide the shredded Monterey Jack into 4–6 equal portions, spacing them apart. Flatten each portion into a thin rectangle.
- Bake the cheese: Bake for about 5–7 minutes, until the cheese is melted and bubbling around the edges. Don’t let it become too dark.
- Add the filling: Remove from the oven and immediately spoon the beef-and-vegetable mixture along one side of each melted cheese rectangle.
- Roll: Carefully roll each cheese sheet around the filling while it is still warm and flexible. Allow the roll-ups to sit seam-side down for a few minutes so they firm up.
- Finish: Sprinkle with fresh parsley and serve warm.
💪 Protein Tip
For an even higher-protein version, use extra-lean ground beef and slightly increase the beef filling. Nutrition will vary depending on the beef and cheese brands used.
