Keto Ricotta Cake

Ingredients:

  • 2 eggs
  • 16 oz ricotta cheese
  • 1/4 cup coconut flour
  • 1/2 cup erythritol (or other sweetener)
  • 1/2 tsp salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Spray a non-stick 9-inch round or 8×8-inch square baking dish with non-stick cooking spray.
  2. In a mixing bowl, whisk the eggs until well beaten.
  3. Add the ricotta cheese, coconut flour, erythritol, and salt to the bowl with the eggs. Mix everything together until well combined and smooth.
  4. Transfer the ricotta mixture into the prepared baking dish, spreading it out evenly.
  5. Place the baking dish in the preheated oven and bake for about 45 minutes, or until the cake is set and lightly golden on top.
  6. Once baked, remove the ricotta cake from the oven and allow it to cool completely in the baking dish.
  7. Once cooled, slice the cake into squares or wedges.
  8. Store any leftovers in the refrigerator.
