Keto Ricotta Cake
Ingredients:
- 2 eggs
- 16 oz ricotta cheese
- 1/4 cup coconut flour
- 1/2 cup erythritol (or other sweetener)
- 1/2 tsp salt

Instructions:
- Preheat your oven to 350°F (175°C). Spray a non-stick 9-inch round or 8×8-inch square baking dish with non-stick cooking spray.
- In a mixing bowl, whisk the eggs until well beaten.
- Add the ricotta cheese, coconut flour, erythritol, and salt to the bowl with the eggs. Mix everything together until well combined and smooth.
- Transfer the ricotta mixture into the prepared baking dish, spreading it out evenly.
