Keto Sausage Green Bean Potato Casserole:
  • 1 pound of ground sausage
  • 1 pound of fresh green beans, trimmed
  • 1 medium-sized cauliflower head, chopped into small pieces
  • 1/2 cup of heavy cream
  • 1/2 cup of chicken broth
  • 1/2 cup of shredded cheddar cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper, to taste
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium-high heat, add the olive oil and brown the ground sausage. Once it’s cooked through, remove it from the skillet and set it aside.
  3. In the same skillet, add the trimmed green beans and cauliflower. Sauté for 5-6 minutes, or until the vegetables are slightly softened.
  4. Add the chicken broth to the skillet, cover it, and let the vegetables steam for an additional 5-6 minutes.
  5. Once the vegetables are cooked, add the cooked sausage to the skillet, along with the heavy cream, garlic powder, onion powder, and salt and pepper. Stir everything together until it’s well combined.
  6. Transfer the mixture to a casserole dish, and sprinkle the shredded cheddar cheese over the top.
  7. Bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly.
