Keto Sausage Pizza Chaffle

This recipe makes 2 chaffles, and you can adjust the toppings and seasonings to your liking for a personalized keto-friendly pizza experience.

Ingredients:

For the Chaffles:

  • 2 eggs
  • 1 sausage link, sliced
  • 1 cup mozzarella cheese, shredded
  • 1 tsp coconut flour
  • 1 tsp Italian seasoning

For Topping:

  • 2 tbsp Marinara Sauce
  • ½ cup mozzarella cheese, shredded

Optional Garnish:

  • Fresh parsley or basil, chopped (if desired)

Instructions:

For the Chaffles:

  1. Preheat the Waffle Maker: Begin by preheating your waffle maker according to its manufacturer’s instructions.
  2. Prepare the Chaffle Batter: In a mixing bowl, combine the eggs, 3/4 cup of mozzarella cheese, coconut flour, and Italian seasoning. Mix thoroughly to create a well-combined chaffle batter. Set this mixture aside.
  3. Cook the Chaffles: For each chaffle, follow these steps:
    • Sprinkle about 1/8 cup of mozzarella cheese onto the preheated waffle maker to create a cheese base.
    • Pour half of the chaffle mixture into the center of the waffle iron, spreading it out to cover the cheese layer.
    • Close the waffle maker and allow it to cook for about 3-5 minutes, or until the chaffle is golden brown and crispy.
  4. Repeat for the Second Chaffle: Carefully remove the first chaffle and set it aside. Then, repeat the process to make the second chaffle.

For Topping and Finishing:

  1. Add Pizza Toppings: Once both chaffles are ready, top each one with your choice of low-carb marinara sauce, the remaining mozzarella cheese, and the sliced sausage.
  2. Cook or Bake: You have two options to melt and cook the toppings:
    • You can put the chaffles back into the waffle maker, close it, and cook for another 2-3 minutes until the cheese is melted and bubbly.
    • Alternatively, you can place the chaffles in an oven preheated to 350°F (175°C) for about 3-5 minutes, or until the cheese is fully melted and the sausage is heated through.
  3. Garnish (Optional): If desired, sprinkle some freshly chopped parsley or basil on top of the chaffles for a burst of flavor and freshness.
