Keto Shrimp & Bacon Chowder 🥓🥣

Creamy, smoky, and packed with flavor! This cozy Keto Shrimp & Bacon Chowder is the perfect low-carb comfort food for a chilly evening. ❤️

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 6 slices bacon, chopped
  • 2 tbsp butter
  • ½ cup onion, diced
  • ½ cup celery, diced
  • 2 cups cauliflower florets
  • 3 cups chicken broth (check for added sugar)
  • ½ cup heavy cream
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp chopped green onions, for garnish (optional)

Instructions:

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside, leaving some bacon drippings in the pot.
  2. Add butter, then sauté the shrimp for 2–3 minutes, until pink and opaque. Remove and set aside.
  3. Add onion, celery, and cauliflower to the pot. Cook for 4–5 minutes, stirring occasionally.
  4. Pour in the chicken broth. Add garlic powder, smoked paprika, salt, and pepper. Simmer for 10–15 minutes, until the cauliflower is tender.
  5. Stir in the heavy cream and simmer gently for another 3–5 minutes. Avoid boiling.
  6. Return the shrimp and crispy bacon to the pot. Heat for 1–2 minutes, just until warmed through.
  7. Garnish with green onions and serve warm.

Keto Tip: Use unsweetened heavy cream and low-carb broth, and keep the onion portion moderate to help control carbs.
