Keto Smoky and Spicy Cauliflower and Cheese Soup
Ingredients:
4 cups chicken broth
2 cups heavy cream
1/2 a head of cauliflower, chopped
2 garlic cloves, minced
1/2 an onion, diced
Bacon
2 tbsp butter
1 cup shredded aged cheddar
1 cup smoked gouda
Cayenne pepper, black pepper and salt to taste
Paprika (smoked paprika preferably)
Directions:

Cook your bacon and chop into small pieces

Sauté onion in butter and bacon grease, add minced garlic a minute before your onions are done

Add broth, cauliflower and cayenne (to taste). Bring to a boil and simmer 15 mins or until cauliflower is soft. Remember that cayenne gets spicier as it cooks.

Add cream and reheat

Blend with a hand blender or regular blender (don’t burn yourself!)

Stir in cheese until melted

Add black pepper and salt to taste

Pour into a bowl and top with chopped bacon and paprika
Makes 6 servings (depending on how hungry you are). 2.6 net carbs per serving.
