Ingredients:

For the Cake:

  • 1 tablespoon of butter
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of almond flour
  • 1/2 tablespoon of coconut flour
  • 2 tablespoons of sweetener of your choice (e.g., Monk fruit)
  • 1/2 teaspoon of baking powder
  • A pinch of Pink Himalayan salt
  • 1 egg

For the Sugar-Free Whipped Cream:

  • 1 cup of cold heavy whipping cream
  • 2 tablespoons of sweetener of your choice (e.g., Monk fruit)
  • 1 teaspoon of vanilla extract

For Assembly:

  • 1/2 cup of sugar-free whipped cream (from the ingredients above)
  • 1/2 cup of fresh strawberries, sliced

Instructions:

For the Sugar-Free Whipped Cream:

  1. In a mixing bowl, combine 1 cup of cold heavy whipping cream, 2 tablespoons of sweetener, and 1 teaspoon of vanilla extract.
  2. Using a hand mixer or a stand mixer, beat the mixture for about 3-4 minutes until stiff peaks form. Set the whipped cream aside.

For the Cake:

  1. In a microwave-safe mug, melt 1 tablespoon of butter (about 30 seconds in the microwave).
  2. Stir in 1 teaspoon of vanilla extract into the melted butter.
  3. Add 3 tablespoons of almond flour, 1/2 tablespoon of coconut flour, 2 tablespoons of sweetener, 1/2 teaspoon of baking powder, and a pinch of Pink Himalayan salt to the mug. Mix these dry ingredients well.
  4. Crack one egg into the mug and stir until all the ingredients are well combined. Smooth the top with the back of a spoon.
  5. Microwave the mug for approximately 90 seconds, or until the cake becomes firm. Cooking times may vary depending on your microwave, so keep an eye on it.
  6. Carefully run a knife along the edge of the mug to release the cake, then flip it over onto a plate. Cut the cake into small cubes.

Assembly:

  1. Place half of the cake cubes at the bottom of a serving jar or dish.
  2. Top the cake cubes with half of the sliced strawberries.
  3. Spoon half of the prepared sugar-free whipped cream on top of the strawberries.
  4. Repeat the layers by adding the remaining cake cubes, strawberries, and whipped cream.
  5. You can garnish with additional strawberry slices or a sprinkle of sweetener if desired.
