- 1/2 cup of sugar-free whipped cream (from the ingredients above)
- 1/2 cup of fresh strawberries, sliced
Instructions:
For the Sugar-Free Whipped Cream:
- In a mixing bowl, combine 1 cup of cold heavy whipping cream, 2 tablespoons of sweetener, and 1 teaspoon of vanilla extract.
- Using a hand mixer or a stand mixer, beat the mixture for about 3-4 minutes until stiff peaks form. Set the whipped cream aside.
For the Cake:
- In a microwave-safe mug, melt 1 tablespoon of butter (about 30 seconds in the microwave).
- Stir in 1 teaspoon of vanilla extract into the melted butter.
- Add 3 tablespoons of almond flour, 1/2 tablespoon of coconut flour, 2 tablespoons of sweetener, 1/2 teaspoon of baking powder, and a pinch of Pink Himalayan salt to the mug. Mix these dry ingredients well.
- Crack one egg into the mug and stir until all the ingredients are well combined. Smooth the top with the back of a spoon.
- Microwave the mug for approximately 90 seconds, or until the cake becomes firm. Cooking times may vary depending on your microwave, so keep an eye on it.
- Carefully run a knife along the edge of the mug to release the cake, then flip it over onto a plate. Cut the cake into small cubes.
