Low-Carb Baked Zucchini Fries with Garlic Aioli Dip
Ingredients: For the Zucchini Fries:
2 medium-sized zucchinis, sliced into thin sticks
1 cup almond flour
1 tsp garlic powder
1 tsp paprika
1 tsp salt
2 eggs, beaten
For the Garlic Aioli Dip:
1 cup mayonnaise
2 garlic cloves, minced
1 tsp lemon juice
1 tsp Dijon mustard
Salt and pepper, to taste
Preheat your oven to 425°F and line a baking sheet with parchment paper.
In a shallow bowl, mix together the almond flour, garlic powder, paprika, and salt.
In a separate bowl, beat the eggs.
Dip each zucchini stick into the beaten eggs, then coat it in the almond flour mixture.
Place the coated zucchini sticks on the prepared baking sheet, leaving a little space between each stick.
Bake the zucchini fries for 20-25 minutes or until golden brown and crispy.
While the zucchini fries are baking, prepare the garlic aioli dip by mixing all the ingredients together in a small bowl. Season with salt and pepper to taste.
Serve the zucchini fries hot with the garlic aioli dip on the side. Enjoy!
