Ingredients
- 1 cup almond flour
- 1/2 cup chocolate protein powder
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons natural peanut butter or almond butter
- 2 tablespoons sugar-free maple syrup or your preferred low-calorie sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3–5 tablespoons unsweetened almond milk, as needed
- 2 tablespoons mini sugar-free chocolate chips, optional
Optional Chocolate Coating
- 1/3 cup sugar-free dark chocolate chips
- 1 teaspoon coconut oil
Instructions
1. Combine the dry ingredients
Add the almond flour, chocolate protein powder, cocoa powder, and salt to a mixing bowl. Whisk until evenly combined and there are no cocoa lumps.
2. Add the wet ingredients
Add the peanut butter, sugar-free maple syrup, and vanilla extract. Stir everything together until a thick, crumbly dough begins to form.
3. Adjust the texture
Add the almond milk 1 tablespoon at a time, mixing after each addition. Stop when the mixture becomes soft and holds together when pressed.
Avoid adding too much liquid—the mixture should be fudgy rather than wet.
4. Add chocolate chips
Fold in the mini chocolate chips if using.
5. Shape the brownie bombs
Scoop out approximately 1 tablespoon of mixture at a time. Roll between your palms to form smooth balls.
Place the brownie bombs on a parchment-lined plate or tray.
6. Chill
Refrigerate for 20–30 minutes to firm them up.
7. Optional chocolate coating
Melt the sugar-free chocolate chips with coconut oil in short 15–20-second intervals in the microwave, stirring between each interval.
Dip or drizzle the chilled brownie bombs with the melted chocolate. Return them to the refrigerator until the coating sets.
Storage
Store in an airtight container in the refrigerator for up to 1 week.
They can also be frozen for up to 2 months. Thaw them in the refrigerator before serving.

- For a stronger chocolate flavor, add 1/2 teaspoon instant espresso powder.
- If the mixture is too dry, add another teaspoon of almond milk.
