PUMPKIN BREAD RECIPE

Ingredients:

For the Bread:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup water

Optional Add-Ins:

  • 1/2 cup chopped nuts (walnuts or pecans)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix the dry ingredients: In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set this aside.
  3. Cream the butter and sugar: In a separate large bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. Add eggs and pumpkin: Beat in the eggs one at a time, then stir in the pumpkin puree.
  5. Combine the wet and dry ingredients: Gradually add the dry ingredient mixture to the wet mixture, alternating with water. Begin and end with the dry ingredients. Mix until just combined.
  6. Add optional ingredients: If desired, fold in chopped nuts, raisins, or chocolate chips.
  7. Pour into the pan: Pour the batter into the greased and floured loaf pan.
  8. Optional topping: In a small bowl, combine the 2 tablespoons of sugar and 1/2 teaspoon of cinnamon. Sprinkle this mixture over the batter in the loaf pan.
  9. Bake: Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool: Allow the pumpkin bread to cool in the pan for about 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.
  11. Slice and serve: Once it’s completely cooled, slice the pumpkin bread and enjoy!
