Salted Caramel Cracker Bites

Ingredients:

For the Crackers:

  • 1 cup almond flour
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)

For the Salted Caramel Sauce:

  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt (adjust to taste)

For Topping:

  • Extra sea salt for sprinkling

Instructions:

For the Crackers:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted butter, egg, salt, and optional garlic powder. Mix until a dough forms.
  3. Place the dough between two sheets of parchment paper and roll it out to your desired thickness (thinner will be crispier).
  4. Using a knife or a pizza cutter, cut the rolled-out dough into small cracker-sized squares.
  5. Carefully transfer the parchment paper with the cut-out crackers to a baking sheet.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  7. Allow the crackers to cool completely before removing them from the parchment paper.

For the Salted Caramel Sauce:

  1. In a saucepan over medium heat, melt the butter.
  2. Add the powdered erythritol and stir until it’s well combined with the butter.
  3. Slowly pour in the heavy cream while stirring continuously to avoid lumps.
  4. Let the mixture simmer for 5-7 minutes, stirring occasionally until it thickens.
  5. Remove the saucepan from the heat and stir in the vanilla extract and sea salt.
  6. Let the salted caramel sauce cool for a few minutes.

Assembling:

  1. Once the crackers and caramel sauce are both cooled, spoon a small amount of the salted caramel onto each cracker.
  2. Sprinkle a tiny pinch of sea salt over each cracker bite for that extra burst of flavor.
  3. Allow the caramel to set for a bit before serving.
