Ingredients:
- 1 pound of canned or fresh salmon (boneless and skinless)
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup mayonnaise
- 1/4 cup chopped green onions
- 1 large egg
- 2 tablespoons lemon juice
- 1 teaspoon Old Bay seasoning (or your preferred seafood seasoning)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Cooking oil (such as avocado oil or olive oil) for frying

Instructions:
- If you’re using canned salmon, drain it and remove any bones or skin. If you’re using fresh salmon, cook it until it’s easily flaked, then allow it to cool.
- In a mixing bowl, combine the flaked salmon, almond flour, Parmesan cheese (if using), mayonnaise, green onions, egg, lemon juice, Old Bay seasoning, garlic powder, paprika, salt, and pepper. Mix everything together until it’s well combined.
- Form the mixture into patties. You can make them as large or as small as you like.
- Heat a skillet over medium heat and add enough cooking oil to coat the bottom.
- Once the oil is hot, carefully place the salmon patties into the skillet. Cook them for about 3-4 minutes on each side or until they are golden brown and cooked through.
- Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
