Ingredients:

For the biscuit dough:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk

For the stuffing:

  • 8 slices of cooked bacon, crumbled
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well.
  3. Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the dry mixture until it resembles coarse crumbs.
  4. Pour the cold buttermilk into the mixture and stir until the dough comes together. Do not overmix; you want a slightly shaggy dough.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat or roll the dough out to a 1/2-inch thickness.
  6. Sprinkle the crumbled bacon and shredded cheddar cheese evenly over half of the biscuit dough.
  7. Fold the other half of the dough over the bacon and cheese filling, creating a half-moon shape.
  8. Gently press the edges to seal in the bacon and cheese.
  9. Use a round biscuit cutter to cut out biscuits from the dough. Place them on the prepared baking sheet, leaving some space between each.
  10. Bake the biscuits in the preheated oven for about 12-15 minutes or until they are golden brown and cooked through.
  11. Remove the biscuits from the oven and allow them to cool for a few minutes before serving. They are best when enjoyed warm.
