COWBOY CASSEROLE

Ingredients:

  1. 1 pound of ground beef
  2. 1 small onion, chopped
  3. 2 cloves of garlic, minced
  4. 1 can (14 oz) of diced tomatoes, drained
  5. 1 can (4 oz) of diced green chilies, drained
  6. 1 cup of cauliflower florets (steamed or roasted)
  7. 1 1/2 cups of shredded cheddar cheese
  8. 1 1/2 cups of shredded Monterey Jack cheese
  9. 1 teaspoon of chili powder
  10. 1/2 teaspoon of cumin
  11. Salt and pepper to taste
  12. Chopped fresh cilantro or green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium-high heat until it’s browned and cooked through. Drain any excess fat.
  3. Add the chopped onions and minced garlic to the skillet with the beef. Sauté for a few minutes until the onions are soft and translucent.
  4. Stir in the diced tomatoes and green chilies. Cook for a few more minutes to combine the flavors.
  5. Season the mixture with chili powder, cumin, salt, and pepper. Adjust the seasonings to your taste.
