Ingredients for the Crust:
- 1 cup almond flour
- 1/4 cup unsweetened shredded coconut

- 2 tablespoons powdered erythritol or stevia
Ingredients for the Cream Cheese Layer:

- 1 cup heavy cream

Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the almond flour, shredded coconut, melted butter, and powdered erythritol (or stevia) for the crust. Mix until well combined.
- Press the crust mixture into the bottom of a 9×9-inch (23×23 cm) baking dish, creating an even layer. Bake the crust for 10-12 minutes or until it turns golden brown. Allow it to cool completely.
- For the cream cheese layer, in a large mixing bowl, beat the softened cream cheese until smooth. Add the heavy cream, powdered erythritol (or stevia), and vanilla extract. Beat until the mixture is light and fluffy.
- Spread the cream cheese layer over the cooled crust in the baking dish.
- For the chocolate layer, heat 1 cup of heavy cream in a saucepan until it starts to simmer. Remove the saucepan from the heat and add the chopped sugar-free dark chocolate, powdered erythritol (or stevia), and vanilla extract. Stir until the chocolate is fully melted and the mixture is smooth.
- Pour the chocolate mixture over the cream cheese layer in the baking dish, spreading it evenly.
- Refrigerate the dessert for at least 2-3 hours, or until it sets.
- Before serving, whip the remaining 1 cup of heavy cream until stiff peaks form. Spread the whipped cream over the chocolate layer.
- Optionally, garnish the top with unsweetened cocoa powder or grated sugar-free chocolate.
