Ingredients for the Crust:

  • 1 cup almond flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup melted butter
  • 2 tablespoons powdered erythritol or stevia

Ingredients for the Cream Cheese Layer:

  • 8 oz (225g) cream cheese, softened
  • 1 cup heavy cream
  • 2 tablespoons powdered erythritol or stevia
  • 1 teaspoon vanilla extract

Ingredients for the Chocolate Layer:

  • 1 cup heavy cream
  • 4 oz (113g) sugar-free dark chocolate (at least 85% cocoa), chopped
  • 2 tablespoons powdered erythritol or stevia
  • 1 teaspoon vanilla extract

Ingredients for the Topping:

  • 1 cup heavy cream
  • Unsweetened cocoa powder or grated sugar-free chocolate for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the almond flour, shredded coconut, melted butter, and powdered erythritol (or stevia) for the crust. Mix until well combined.
  3. Press the crust mixture into the bottom of a 9×9-inch (23×23 cm) baking dish, creating an even layer. Bake the crust for 10-12 minutes or until it turns golden brown. Allow it to cool completely.
  4. For the cream cheese layer, in a large mixing bowl, beat the softened cream cheese until smooth. Add the heavy cream, powdered erythritol (or stevia), and vanilla extract. Beat until the mixture is light and fluffy.
  5. Spread the cream cheese layer over the cooled crust in the baking dish.
  6. For the chocolate layer, heat 1 cup of heavy cream in a saucepan until it starts to simmer. Remove the saucepan from the heat and add the chopped sugar-free dark chocolate, powdered erythritol (or stevia), and vanilla extract. Stir until the chocolate is fully melted and the mixture is smooth.
  7. Pour the chocolate mixture over the cream cheese layer in the baking dish, spreading it evenly.
  8. Refrigerate the dessert for at least 2-3 hours, or until it sets.
  9. Before serving, whip the remaining 1 cup of heavy cream until stiff peaks form. Spread the whipped cream over the chocolate layer.
  10. Optionally, garnish the top with unsweetened cocoa powder or grated sugar-free chocolate.
