• Keto-Friendly Low Carb Chili
I’ve worked it out using my Carb Manager app. These work out to be around 6 – 8 g of carbs per serving. But it will satisfy any Chili cravings you might be having without any of the high carb ingredients.
2 cups finely chopped celery
2 cups chopped fresh cremini mushrooms
1 cup chopped cherry tomatoes
1 can diced tomatoes
1 green pepper
1 package ground chicken (or beef or pork)
2 tbsp tomato paste
5 tsp celery salt
Place large pot on stove over medium-low heat and sprinkle olive oil in the bottom of the pot.
When the pot is warm, add chopped celery and green pepper. Stir occasionally, season with salt and pepper.
Next add mushrooms, then cherry tomatoes and stir.
When vegetables have rendered down add your ground meat. (Cooked or uncooked is up to you.) Cover pot with lid, stirring occasionally as the meat cooks through. Season with salt and pepper again.
When the meat has cooked, add half the can of diced tomatoes and the tomato paste.
Take your peeled and chopped avocados, the remainder of the diced tomatoes and salsa (can be leftover salsa if it’s low carb) and put into blender or food processor. Purée then add them into the chili pot.
Stir and then add in all your spices / seasonings.
Cover and let simmer for about 10-20 minutes on low heat.
