1. Crispy Keto Cottage Cheese Chicken Nuggets

Servings: 4 | Prep: 10 minutes | Cook: 15 minutes

Estimated macros per serving:
Calories: 245 | Net Carbs: 3g | Protein: 30g | Fat: 12g

Ingredients

  • 1 lb ground chicken
  • ½ cup full-fat cottage cheese
  • 1 large egg
  • ¼ cup almond flour
  • ¼ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray

Instructions

Step 1: In a large bowl, combine ground chicken, cottage cheese, egg, almond flour, Parmesan, and seasonings. Mix until everything is well combined.

Step 2: Using a spoon or slightly wet hands, shape the mixture into small nuggets.

Step 3: Preheat your air fryer to 375°F (190°C). Lightly spray the basket with olive oil and arrange the nuggets in a single layer.

Step 4: Air fry for 12–15 minutes, flipping halfway through, until golden brown and the centers reach 165°F (74°C).

Step 5: Serve warm with sugar-free ranch dressing or your favorite keto dipping sauce.

2. Keto Cinnamon Sugar Donut Holes

Servings: 6 (2 donut holes each) | Prep: 10 minutes | Cook: 12 minutes

Estimated macros per serving:
Calories: 195 | Net Carbs: 3g | Protein: 6g | Fat: 17g

Ingredients

For the Donut Holes:

  • 1½ cups finely ground almond flour
  • ¼ cup full-fat cottage cheese, blended smooth
  • 1 large egg
  • 3 tbsp melted butter
  • 3 tbsp powdered monk fruit sweetener
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Pinch of salt

For the Cinnamon Coating:

  • 2 tbsp melted butter
  • 2 tbsp granulated monk fruit sweetener
  • 1 tsp ground cinnamon

Instructions

Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: In a bowl, mix almond flour, baking powder, cinnamon, sweetener, and salt. Add the blended cottage cheese, egg, melted butter, and vanilla. Stir until a soft dough forms.

Step 3: Let the dough rest for 5 minutes, then shape into 12 small balls and place them on the baking sheet.

Step 4: Bake for 12–16 minutes until lightly golden and firm. Allow them to cool for 5 minutes.

Step 5: Brush each donut hole with melted butter, then roll in the cinnamon and monk fruit sweetener mixture.

Step 6: Serve slightly warm for a delicious low-carb treat.

My Favorite Tip: Use finely ground blanched almond flour for softer donut holes, and don’t overbake them!
