🛒 Ingredients
- 1 cup (225 g) low-fat cottage cheese
- 1 cup (100 g) strawberry protein powder
- ½ cup (75 g) fresh strawberries, finely diced
Optional: 1–2 tbsp monk fruit sweetener if you prefer them sweeter.

- Preheat oven to 350°F (175°C). Line a 6–8 cup muffin pan with silicone liners.
- Add the cottage cheese and protein powder to a blender or food processor. Blend until completely smooth and creamy.
- Gently fold in the diced strawberries.
- Divide the batter evenly between the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until the tops are set and a toothpick inserted in the center comes out mostly clean.
- Let the muffins cool in the pan for 5–10 minutes, then transfer to a rack.
