🥯 Soft & Chewy Cottage Cheese Protein Bagels

These easy cottage cheese bagels are soft, chewy, fluffy, and packed with protein. They’re perfect for breakfast sandwiches, a quick snack, or serving with cream cheese and smoked salmon.

Makes: 4 bagels
Prep: 10 minutes
Bake: 20–25 minutes

🛒 Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup finely ground almond flour
    or use oat flour for a higher-carb version
  • 1½ tsp baking powder
  • Pinch of salt
  • Everything Bagel seasoning, optional
  • 1–2 tbsp shredded cheese, optional for topping

👩‍🍳 Directions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Blend the cottage cheese until smooth. This gives the bagels a much softer texture. A food processor or blender works well.
  3. Add the eggs and blend briefly until combined.
  4. In a bowl, whisk together the almond flour, baking powder, and salt.
  5. Pour the cottage-cheese mixture into the dry ingredients. Stir until a thick, sticky dough forms.
  6. Rest the dough for 3–5 minutes. Almond flour will absorb some of the moisture and make the dough easier to shape.
  7. Divide the mixture into 4 portions. With lightly oiled or wet hands, shape each portion into a ball and make a hole in the center to form a bagel.
  8. Place the bagels on the prepared baking sheet. Sprinkle with Everything Bagel seasoning if desired.
  9. Bake for 20–25 minutes, until puffed and golden brown around the edges.
  10. Let them cool for 10 minutes before slicing. They firm up as they cool.

⭐ Tips for the Best Bagels

  • Use full-fat or 2% cottage cheese for a richer texture.
  • If your cottage cheese is particularly watery, drain off some of the liquid first.
  • Don’t add lots of extra flour—the dough should be soft and slightly sticky.
  • For extra flavor, mix in garlic powder, dried herbs, or shredded cheddar.
  • Toast the cooled bagels before serving for a delicious crispy outside.
