One of My All-Time Favorite Keto Treats! 😍❀️

These Keto Cream Puffs are light, airy, creamy, and deliciously low-carb. Instead of traditional flour and sugar, this version uses almond flour and a keto-friendly sweetener to create a tender pastry filled with a rich whipped cream filling.

Makes: 10–12 cream puffs
Prep time: 20 minutes
Bake time: 25–30 minutes
Total time: ~50 minutes

πŸ›’ Ingredients

For the Keto Puffs

  • ΒΎ cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons powdered erythritol or monk-fruit sweetener
  • Β½ teaspoon baking powder
  • ΒΌ teaspoon salt
  • 3 large eggs, room temperature
  • 3 tablespoons unsalted butter
  • ΒΌ cup water
  • Β½ teaspoon vanilla extract

Cream Filling

  • ΒΎ cup heavy whipping cream, cold
  • 2 tablespoons powdered keto sweetener
  • Β½ teaspoon vanilla extract
  • 2 tablespoons softened cream cheese, optional, for a thicker filling

Optional Topping

  • Powdered keto sweetener
  • Sugar-free melted chocolate
  • A few fresh berries

πŸ‘©β€πŸ³ Step-by-Step Instructions

1. Prepare the Oven

Preheat your oven to 350Β°F (175Β°C).

Line a baking sheet with parchment paper.

2. Combine the Dry Ingredients

In a bowl, whisk together:

  • Almond flour
  • Coconut flour
  • Baking powder
  • Salt
  • Powdered sweetener

Set aside.

3. Make the Butter Mixture 🧈

Add the butter and water to a small saucepan.

Heat over medium heat until the butter has completely melted and the mixture is hot.

Remove from the heat.

Stir in the vanilla.

4. Add the Dry Ingredients

Immediately add the dry ingredients to the warm butter mixture.

Stir vigorously with a wooden spoon or silicone spatula until a thick dough forms.

Return the saucepan to low heat for about 1 minute, stirring constantly.

This helps remove some excess moisture.

Remove from the heat and let the mixture cool for 3–5 minutes.

5. Add the Eggs πŸ₯š

Add the eggs one at a time, mixing thoroughly after each addition.

The dough may look separated at first, but keep stirring until smooth.

The finished dough should be thick, soft, and slightly sticky.

πŸ₯ 6. Form the Cream Puffs

Spoon the dough into a piping bag.

Pipe 10–12 small mounds onto the prepared baking sheet, leaving space between them.

If you don’t have a piping bag, simply use two spoons to form rounded mounds.

Lightly smooth any sharp peaks with a damp fingertip.

7. Bake

Bake at 350Β°F (175Β°C) for approximately 25–30 minutes, until the puffs are golden and feel firm on the outside.

Don’t open the oven during the first 20 minutes, as a sudden temperature change can cause them to collapse.

Once baked, turn off the oven and leave the puffs inside with the door slightly open for about 5–10 minutes.

Transfer them to a wire rack and allow them to cool completely.

πŸ₯› 8. Make the Cream Filling

Pour the cold heavy cream into a mixing bowl.

Add the powdered keto sweetener and vanilla.

Whip with an electric mixer until stiff peaks form.

For a thicker cheesecake-style filling, beat in the softened cream cheese until smooth.

Don’t overbeat the cream or it can become grainy.

✨ 9. Fill the Cream Puffs

Once the pastry shells are completely cool, use a small knife to make a hole in the bottom or side of each puff.

Pipe the whipped cream filling inside.

Fill generously but avoid overfilling.

🍫 10. Finish & Serve

For a simple finish, dust lightly with powdered keto sweetener.

For a chocolate version, drizzle with sugar-free melted chocolate.

Refrigerate for 15–30 minutes before serving if you want the filling extra firm.

πŸ’‘ Important Tips for Success

Don’t add the eggs while the dough is piping hot. Let it cool for a few minutes first.

Bake until properly browned. Underbaked cream puffs are more likely to collapse.

Don’t open the oven early. Wait until they’re mostly set.

Cool completely before filling. Warm pastry will melt the whipped cream.

Use powdered sweetener. It gives the filling a smoother texture.

πŸ“ Flavor Ideas

Chocolate Cream Puffs

Add a little unsweetened cocoa powder to the filling and top with sugar-free chocolate.

Strawberry Cream

Fold a few finely chopped strawberries into the whipped cream. Keep portions modest if you’re strictly limiting carbs.

Lemon Cream

Add Β½ teaspoon lemon zest and a small squeeze of lemon juice to the filling.

Vanilla Cheesecake

Use cream cheese in the filling and add extra vanilla for a rich cheesecake flavor.

πŸ“Š Approximate Nutrition

For 12 cream puffs, without optional toppings:

  • Calories: ~140–170 each
  • Protein: ~3–4g
  • Fat: ~13–15g
  • Net carbs: ~2–3g

Nutrition varies depending on the brands and sweetener used.

❀️ Final Result

Light, golden keto pastry on the outside, with a rich, fluffy cream centerβ€”a perfect little low-carb treat for when you want something that feels like a bakery dessert without traditional flour and sugar. πŸ₯πŸ˜
