Cook Time: 50–60 minutes
Total Time: 1 hour 20 minutes
Servings: 6
Ingredients
For the chicken meatloaf
- 2 lbs (900g) ground chicken
- 1 large egg
- ½ cup almond flour
- ¼ cup grated Parmesan cheese
- 2 tablespoons finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
For the filling
- 6 slices deli ham
- 6 slices Swiss cheese
- 2 tablespoons cream cheese, softened (optional)
For the topping
- ½ cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan
- ½ teaspoon paprika
- 1 tablespoon chopped fresh parsley
Instructions
Step 1: Prepare the oven
Preheat your oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment paper and lightly grease it.
Step 2: Make the chicken mixture
In a large mixing bowl, combine ground chicken, egg, almond flour, Parmesan, chopped onion, minced garlic, Dijon mustard, paprika, Italian seasoning, salt, and black pepper.
Mix gently until everything is evenly combined. Avoid overmixing, as this can make the meatloaf dense.
Step 3: Shape the meatloaf
Place half of the chicken mixture onto the prepared baking sheet. Shape it into a rectangular loaf, approximately 9 × 5 inches.
Flatten the center slightly to create space for the filling.
Step 4: Add the Cordon Bleu filling
Spread the softened cream cheese over the center if using. Arrange the ham slices evenly over the chicken mixture, followed by the Swiss cheese slices.
Leave a small border around the edges so the filling stays inside.
Step 5: Seal the meatloaf
Carefully cover the filling with the remaining chicken mixture. Pinch and seal the edges completely, making sure the ham and cheese are enclosed.
Shape into a smooth loaf.
Step 6: Bake
Bake uncovered for approximately 40–45 minutes, or until the center is almost cooked through.
Step 7: Add the cheesy topping
Sprinkle shredded mozzarella, Parmesan, and paprika over the top.
Return to the oven for another 10–15 minutes, until the cheese is melted and the internal temperature of the chicken reaches 165°F (74°C).
Step 8: Rest and serve
Remove from the oven and allow the meatloaf to rest for 10 minutes before slicing. Garnish with fresh parsley and serve warm.
