🥧 Keto Mini Chicken Pot Pies

Creamy, comforting, and low-carb—these individual chicken pot pies are perfect for a cozy dinner without the traditional high-carb pastry.

🛒 Ingredients — Makes 6 mini pies

Chicken filling

  • 2 cups cooked chicken, shredded or diced
  • 1 tbsp butter
  • ½ small onion, finely chopped
  • 1 garlic clove, minced
  • ½ cup mushrooms, chopped
  • ½ cup broccoli, finely chopped
  • ¼ cup heavy cream
  • ½ cup chicken broth
  • 2 tbsp cream cheese
  • ½ tsp dried thyme
  • ½ tsp dried parsley
  • ¼ tsp black pepper
  • Salt, to taste
  • ½ cup shredded mozzarella

Keto topping

  • 1 cup shredded mozzarella
  • ½ cup almond flour
  • 2 tbsp cream cheese
  • 1 tbsp melted butter
  • 1 egg
  • ¼ tsp baking powder
  • Pinch of salt

👩‍🍳 Instructions

  1. Prepare the filling
    Preheat oven to 190°C (375°F).

Melt butter in a skillet over medium heat. Add onion and cook for 2–3 minutes. Add garlic and mushrooms and cook for another 2 minutes.

Add broccoli, chicken broth, heavy cream, and cream cheese. Stir until the cream cheese melts and the sauce becomes creamy.

Add chicken, thyme, parsley, pepper, and salt. Simmer for 3–5 minutes until slightly thickened.

Stir in the mozzarella and remove from heat.

  1. Make the keto topping
    In a bowl, combine almond flour, mozzarella, cream cheese, melted butter, egg, baking powder, and salt.

Mix until you have a soft, thick dough.

  1. Assemble
    Divide the chicken mixture between 6 small oven-safe ramekins.

Flatten small portions of the topping dough and place them over each ramekin. Gently press around the edges.

Make a small slit in the center of each topping to allow steam to escape.

  1. Bake
    Place the ramekins on a baking tray and bake for 18–25 minutes, until the tops are golden and the filling is bubbling around the edges.

Let them cool for 5 minutes before serving.

💡 Keto Tips

  • Use unsweetened, full-fat ingredients and check labels for added sugars.
  • For an even lower-carb version, replace the onion with a small amount of green onion.
  • Cauliflower, zucchini, spinach, or green beans work well in the filling.
  • Don’t add flour or cornstarch to thicken the sauce—the cream cheese helps give it body.

Approximate nutrition per mini pie: depends heavily on the brands and exact portion sizes, but these are designed to be low-carb and protein-rich.
