🍎 Roasted Apple Stuffed Acorn Squash β€” Keto-Style

Tender roasted acorn squash filled with warm cinnamon β€œapple” filling, crunchy pecans, and a buttery caramelized flavor. Traditional acorn squash + apples are too high in carbs for strict keto, so this version uses a smaller squash portion and a low-carb apple-style filling.

For the squash

  • 2 small acorn squashes
  • 1 tbsp melted butter
  • Β½ tsp cinnamon
  • ΒΌ tsp salt
  • Β½ tsp monk fruit sweetener, optional

For the keto β€œapple” filling

  • 1Β½ cups peeled, finely diced chayote squash or zucchini
  • 2 tbsp butter
  • 2 tbsp chopped pecans
  • 1–2 tbsp monk fruit sweetener, to taste
  • 1 tsp cinnamon
  • ΒΌ tsp nutmeg
  • Β½ tsp vanilla extract
  • 1 tsp lemon juice
  • Pinch of salt
  • Optional: a tiny amount of apple-flavored extract for more apple-like flavor

  1. Prepare the squash:
    Heat oven to 200Β°C / 400Β°F. Cut the acorn squashes in half and scoop out the seeds.
  2. Season:
    Brush the cut sides with melted butter. Sprinkle with cinnamon and salt.
  3. Roast:
    Place cut-side down on a lined baking tray. Roast for 30–35 minutes, until the flesh is tender.
  4. Make the filling:
    Melt butter in a skillet over medium heat. Add diced chayote or zucchini and cook for 6–8 minutes, stirring occasionally.
  5. Add monk fruit, cinnamon, nutmeg, vanilla, lemon juice, and salt. Cook another 2–3 minutes until the mixture is tender and lightly caramelized.
  6. Stir in the chopped pecans.
  7. Stuff the squash:
    Turn the roasted squash cut-side up and spoon the warm filling into each half.
  8. Return to the oven for 5–8 minutes until warm and lightly caramelized.
  9. Finish with a small sprinkle of cinnamon and a few extra pecans.

  • Strict keto: Acorn squash itself is relatively carb-heavy, so keep the portion small and count the carbs in your specific squash.
  • Lower-carb option: Use zucchini or chayote as the main β€œstuffing” and serve a smaller amount of acorn squash.
  • Use monk fruit instead of sugar for sweetness.
  • Skip maple syrup, honey, brown sugar, and regular caramel sauce.
  • For more protein, serve alongside grilled chicken, turkey, eggs, or Greek yogurt.

Important: This is better described as keto-style/low-carb, rather than a truly zero-carb recipe, because both acorn squash and its apple-style filling contain carbohydrates.
