No-Bake β€’ Low-Carb β€’ Keto-Friendly β€’ Chocolatey & Delicious

These Keto Coconut Joys are an irresistible little treat made with shredded coconut, creamy coconut butter, crunchy almonds, and a smooth sugar-free chocolate coating. They’re perfect for satisfying a chocolate craving while keeping the carbs low.

πŸ₯₯ Ingredients

For the Coconut Filling

  • 2 cups unsweetened shredded coconut
  • Β½ cup coconut cream or thick coconut milk
  • 3 tablespoons powdered erythritol or another keto-friendly powdered sweetener
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 12–16 whole almonds

For the Chocolate Coating

  • 1Β½ cups sugar-free dark chocolate chips or chopped keto chocolate
  • 1 tablespoon coconut oil

🍫 Instructions

1. Prepare the coconut mixture
Add the unsweetened shredded coconut, coconut cream, powdered sweetener, melted coconut oil, vanilla extract, and salt to a bowl.

Mix thoroughly until the coconut is evenly coated and the mixture becomes moist and sticky.

2. Chill the mixture
Place the bowl in the refrigerator for about 15–20 minutes. Chilling makes the mixture easier to shape.

3. Shape the coconut joys
Scoop out approximately 1½–2 tablespoons of the mixture at a time. Press and shape it into small oval or rectangular pieces.

Place one almond on top of each piece, gently pressing it into the coconut mixture.

Arrange them on a parchment-lined plate or tray.

4. Freeze until firm
Place the shaped coconut pieces in the freezer for approximately 20–30 minutes, or until firm.

5. Melt the chocolate
Add the sugar-free chocolate and coconut oil to a microwave-safe bowl.

Microwave in 15–20 second intervals, stirring well between each interval, until completely smooth.

You can also melt the chocolate gently over a double boiler.

6. Coat the coconut pieces
Using a fork, dip each chilled coconut piece into the melted chocolate.

Allow excess chocolate to drip back into the bowl, then place each piece onto parchment paper.

For an extra chocolatey treat, drizzle additional melted chocolate over the top.

7. Set the chocolate
Refrigerate the Keto Coconut Joys for approximately 20–30 minutes, or until the chocolate coating has completely hardened.

Store the finished treats in an airtight container in the refrigerator for up to 1 week.

They can also be frozen for approximately 1–2 months. Let them sit at room temperature for a few minutes before eating.
