- 1 cup plain nonfat Greek yogurt
- 2 large eggs
- 1 scoop vanilla protein powder (about 25β30 g)
- 2 tbsp almond flour
- 1β2 tbsp monk fruit sweetener, to taste
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- Β½ tsp baking powder
- Β½ tsp vanilla extract
- Pinch of salt

- Preheat your oven to 350Β°F (175Β°C). Line a small loaf pan or 7β8-inch cake pan with parchment paper.
- In a bowl, whisk together the Greek yogurt and eggs until smooth.
- Add the protein powder, almond flour, monk fruit, baking powder, vanilla, and salt.
- Stir in the lemon juice and zest. Mix just until everything is combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for approximately 20β25 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
- Allow it to cool for 10β15 minutes before slicing.

Mix:
- 2 tbsp Greek yogurt
- A little monk fruit sweetener
- A few drops of lemon juice
- Lemon zest
Spread a thin layer over the cooled cake.
