🥘 Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 1 tsp paprika
- ½ tsp salt, or to taste
- ½ tsp black pepper
- 1 tbsp butter
For the Creamy Pasta
- 300 g spaghetti
- 2 tbsp butter
- 4 cloves garlic, finely minced
- ½ cup heavy cream
- ¼ cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
- 2–3 tbsp reserved pasta water, as needed
- 2 tbsp chopped fresh parsley
👩🍳 Instructions
1. Cook the spaghetti
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to the package directions until al dente.
- Before draining, reserve about ½ cup of pasta water.
- Drain the spaghetti and set aside.
2. Season the chicken
- Pat the chicken breasts dry with paper towels.
- Season both sides with paprika, salt, and black pepper.
- For thicker chicken breasts, gently pound them to an even thickness so they cook evenly.
3. Cook the garlic-butter chicken
- Heat a large skillet over medium-high heat.
- Add 1 tablespoon butter.
- Once melted and hot, place the chicken breasts in the skillet.
- Cook for about 5–7 minutes per side, depending on thickness, until golden brown and cooked through.
- The chicken should reach 165°F / 74°C in the thickest part.
- Transfer the chicken to a plate and let it rest for 5 minutes.
4. Make the creamy garlic sauce
- Reduce the skillet heat to medium.
- Add the remaining 2 tablespoons butter.
- Add the minced garlic and sauté for about 30–60 seconds, just until fragrant. Avoid browning the garlic.
- Pour in the heavy cream and stir, scraping up the flavorful browned bits from the bottom of the pan.
- Simmer gently for 2–3 minutes.
- Stir in the Parmesan cheese.
- Season with salt and black pepper.
- If the sauce is too thick, add a splash of reserved pasta water until it reaches a smooth, creamy consistency.
5. Combine the pasta
- Add the cooked spaghetti directly to the creamy sauce.
- Toss thoroughly until every strand is coated.
- Add another splash of pasta water if needed.
- Cook for another 1–2 minutes over low heat.
6. Assemble
- Slice the rested chicken into strips or bite-sized pieces.
- Divide the creamy pasta between plates.
- Arrange the garlic-butter chicken over the top.
- Sprinkle generously with chopped parsley.
- Finish with a little extra Parmesan and freshly cracked black pepper if desired.
