Extra-Crispy Golden Beef & Vegetable Egg Rolls

These Extra-Crispy Golden Beef & Vegetable Egg Rolls are packed with lean ground beef, crunchy vegetables, and aromatic seasonings. Baking or air-frying gives them a wonderfully crisp exterior while keeping the filling hearty and protein-rich.

Ingredients

High-Protein Filling

  • 1 lb (450 g) lean ground beef, preferably 90–95% lean
  • 1 tablespoon avocado or olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 cups finely shredded cabbage
  • 1 medium carrot, julienned or grated
  • 1/2 cup finely chopped mushrooms
  • 1/2 cup chopped green onions
  • 2 tablespoons low-sodium soy sauce or coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes, optional

For the Egg Rolls

  • 12 egg roll wrappers
  • 1 egg, beaten, for sealing
  • Cooking spray or 1–2 tablespoons oil for brushing

Optional Protein Boost

  • 2 egg whites, lightly beaten
  • 2 tablespoons finely chopped green onions
  • 1 tablespoon sesame seeds

Instructions

1. Cook the Beef

Heat a large skillet over medium-high heat. Add the oil and lean ground beef.

Cook for 5–7 minutes, breaking the beef apart with a spatula, until browned and completely cooked through.

Drain excess fat if necessary.

2. Add Garlic and Ginger

Add the minced garlic and grated ginger to the beef.

Cook for about 30–60 seconds, stirring constantly, until fragrant.

3. Add the Vegetables

Add the shredded cabbage, carrot, mushrooms, and green onions.

Stir-fry for 3–5 minutes. The vegetables should soften slightly while still retaining some crunch.

4. Season the Filling

Add the soy sauce, rice vinegar, sesame oil, black pepper, garlic powder, and red pepper flakes.

Stir everything together and cook for another 1–2 minutes.

For an additional protein boost, push the filling to one side of the skillet. Add the lightly beaten egg whites to the empty side and scramble until cooked, then mix them into the beef and vegetables.

5. Cool the Filling

Remove the skillet from the heat.

Spread the filling onto a plate or shallow dish and allow it to cool for about 10 minutes.

This step is important because very hot filling can make the wrappers soft and difficult to roll.

6. Fill the Egg Roll Wrappers

Place one wrapper on a clean surface with one corner pointing toward you.

Add approximately 2–3 tablespoons of filling across the lower-middle portion of the wrapper.

Do not overfill.

Fold the bottom corner over the filling, then fold both side corners inward.

Roll tightly toward the remaining corner.

Brush the final corner with beaten egg and press gently to seal.

Repeat with the remaining wrappers and filling.

7. Air-Fryer Method

Preheat the air fryer to 375°F (190°C).

Lightly spray or brush the egg rolls with oil.

Arrange them in a single layer without overcrowding.

Air-fry for 8–10 minutes, turning halfway through, until golden brown and crisp.

8. Oven Method

Preheat the oven to 425°F (220°C).

Place the egg rolls on a parchment-lined baking sheet, leaving space between them.

Lightly brush or spray them with oil.

Bake for 18–22 minutes, turning halfway through, until golden and crispy.

9. Optional Pan-Frying Method

For a more traditional crispy finish, heat about 1/2 inch of neutral oil in a skillet over medium-high heat.

Carefully fry the egg rolls in batches for approximately 2–3 minutes per side, turning until evenly golden.

Transfer to a wire rack or paper towel-lined plate to drain.

Serve 3 egg rolls with:

  • Greek-yogurt garlic dipping sauce
  • Edamame
  • Steamed broccoli
  • Cucumber salad
  • Egg-drop soup
  • A side of grilled chicken for an even higher-protein meal

🥣 High-Protein Dipping Sauce

Mix together:

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • A pinch of red pepper flakes

Stir until smooth and refrigerate until ready to serve.

💪 Protein Tips

For a higher-protein filling, use 90–95% lean ground beef and add egg whites to the vegetable mixture. Keeping the vegetables finely chopped allows you to pack more filling into each egg roll without making them difficult to roll.

For the best texture, avoid adding too much liquid to the filling and cool it thoroughly before assembling.

Approximate nutrition: Depending on the wrappers, beef leanness, and cooking method, each egg roll provides roughly 13–16 g protein. Exact values will vary by brand and portion size.
