Prep Time: 10 minutes
Cook Time: 25–30 minutes
Total Time: 40 minutes
Servings: 6 buns
Ingredients
- 1 cup cottage cheese (preferably low-fat)
- 2 large eggs
- 1½ cups finely ground almond flour
- 2 tablespoons unflavored whey protein powder
- 1 teaspoon baking powder
- ½ teaspoon garlic powder (optional)
- ½ teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon sesame seeds (optional)
- 1 tablespoon everything bagel seasoning (optional)
Instructions
1. Preheat the oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Prepare the cottage cheese
Add cottage cheese to a blender or food processor and blend until completely smooth. This creates a softer, more even bun texture.
3. Mix the wet ingredients
In a large mixing bowl, whisk together the blended cottage cheese, eggs, and olive oil until smooth.
4. Combine the dry ingredients
In a separate bowl, mix almond flour, whey protein powder, baking powder, salt, and garlic powder.
5. Make the dough
Gradually add the dry ingredients to the cottage cheese mixture. Stir until a thick, slightly sticky dough forms.
Let the dough rest for 5 minutes so the almond flour can absorb moisture.
6. Shape the buns
Divide the dough into 6 equal portions. With slightly damp hands, shape each portion into a round bun.
Place them on the prepared baking sheet, leaving space between each bun. Gently flatten the tops.
7. Add toppings
Brush the tops lightly with a little beaten egg if desired. Sprinkle with sesame seeds or everything bagel seasoning.
8. Bake
Bake for 25–30 minutes, or until the buns are golden brown and firm to the touch.
9. Cool and serve
Remove from the oven and allow the buns to cool for at least 10–15 minutes before slicing. Cooling helps them become firmer and hold their shape.
Enjoy with eggs, grilled chicken, turkey, cheese, or your favorite low-carb sandwich fillings!
