🥕 Roasted Root Vegetable Bake with Feta & Walnuts

A colorful, hearty vegetable bake featuring caramelized root vegetables, tangy feta, crunchy walnuts, and fragrant herbs. It makes a delicious vegetarian side dish or a light meatless meal.

🧾 Ingredients

Serves 3–4

🥕 Vegetables

  • 2 carrots, peeled and sliced
  • 2 medium potatoes or sweet potatoes, peeled and cut into 1-inch cubes
  • 1 medium red onion, cut into wedges
  • 1 medium beet, peeled and cubed
  • 1 small parsnip, peeled and sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

🌿 Seasoning

  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice

🧀 Toppings

  • ½ cup crumbled feta cheese
  • ⅓ cup walnuts, roughly chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon honey or maple syrup, optional
  • Extra drizzle of olive oil, optional

👩‍🍳 Instructions

  1. Preheat the oven: Set the oven to 425°F (220°C). Line a large baking sheet or roasting dish with parchment paper.
  2. Prepare the vegetables: Place the carrots, potatoes or sweet potatoes, red onion, beet, and parsnip in a large bowl.
  3. Season: Add olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and black pepper. Toss thoroughly until all the vegetables are evenly coated.
  4. Arrange for roasting: Spread the vegetables into a single layer. Avoid overcrowding the pan so they roast and caramelize rather than steam.
  5. Roast: Bake for 30–40 minutes, stirring or flipping the vegetables halfway through. They should become tender inside with beautifully browned, caramelized edges.
  6. Add the walnuts: Sprinkle the chopped walnuts over the vegetables during the last 5–7 minutes of baking so they become lightly toasted without burning.
  7. Finish with lemon: Remove the bake from the oven and drizzle with fresh lemon juice. Toss gently.
  8. Add feta: Sprinkle the crumbled feta over the hot roasted vegetables.
  9. Garnish: Finish with fresh parsley and an optional small drizzle of honey or maple syrup for a sweet-savory contrast.

🍽️ Serving Suggestions

Serve warm as a side dish with grilled chicken, roasted fish, turkey, or a simple green salad. It can also be enjoyed on its own as a vegetarian meal.

💡 For a Higher-Protein Version

The original bake is vegetarian but not particularly high in protein. To increase protein, add chickpeas, lentils, grilled chicken, or extra feta, depending on your dietary preference.
