🥕 Vegetables
- 2 carrots, peeled and sliced
- 2 medium potatoes or sweet potatoes, peeled and cut into 1-inch cubes
- 1 medium red onion, cut into wedges
- 1 medium beet, peeled and cubed
- 1 small parsnip, peeled and sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
🌿 Seasoning
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh lemon juice

- ½ cup crumbled feta cheese
- ⅓ cup walnuts, roughly chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon honey or maple syrup, optional
- Extra drizzle of olive oil, optional

- Preheat the oven: Set the oven to 425°F (220°C). Line a large baking sheet or roasting dish with parchment paper.
- Prepare the vegetables: Place the carrots, potatoes or sweet potatoes, red onion, beet, and parsnip in a large bowl.
- Season: Add olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and black pepper. Toss thoroughly until all the vegetables are evenly coated.
- Arrange for roasting: Spread the vegetables into a single layer. Avoid overcrowding the pan so they roast and caramelize rather than steam.
- Roast: Bake for 30–40 minutes, stirring or flipping the vegetables halfway through. They should become tender inside with beautifully browned, caramelized edges.
- Add the walnuts: Sprinkle the chopped walnuts over the vegetables during the last 5–7 minutes of baking so they become lightly toasted without burning.
- Finish with lemon: Remove the bake from the oven and drizzle with fresh lemon juice. Toss gently.
- Add feta: Sprinkle the crumbled feta over the hot roasted vegetables.
- Garnish: Finish with fresh parsley and an optional small drizzle of honey or maple syrup for a sweet-savory contrast.
