π§Ύ Ingredients
- Β½ cup fresh lime juice
- 1 can (13.5 oz) unsweetened full-fat coconut milk
- ΒΌ cup sugar-free sweetened condensed milk or keto condensed milk
- Β½ cup cold water
- 2 cups ice
- Optional: Β½β1 teaspoon lime zest for extra lime flavor
- Optional: lime slices and shredded coconut for garnish
π©βπ³ Instructions
1. Prepare the lime juice
Squeeze fresh limes until you have Β½ cup of juice. For the brightest flavor, use freshly squeezed lime juice rather than bottled juice.
2. Blend the creamy base
Add the coconut milk, sugar-free condensed milk, fresh lime juice, and cold water to a blender.
Blend for about 20β30 seconds, until smooth and creamy.
3. Add the ice
Add the 2 cups of ice and blend again until the drink becomes cold, frothy, and slightly slushy.
If your blender struggles with the ice, add it gradually.
4. Taste and adjust
Taste the limeade. If you prefer it more tart, add another tablespoon of lime juice. If you like it sweeter, add a little additional keto-friendly sweetener.
5. Serve immediately
Pour into chilled glasses and garnish with a lime wheel or a small sprinkle of unsweetened shredded coconut.
π‘ Tips for the Best Limonada de Coco
- Use full-fat coconut milk for the richest, creamiest texture.
- Fresh lime juice gives the drink a much brighter flavor.
- Shake or stir the coconut milk well before measuring.
- For an extra-thick drink, use a little more ice.
- For a thinner limeade, add a few tablespoons of cold water.
- Serve immediately because the coconut milk can naturally separate as it sits.
π₯₯ Low-Carb Note
To keep this drink low-carb, make sure the condensed milk is sugar-free/keto-friendly and check its nutrition label, since different brands can vary considerably in carbohydrates.
For an even lighter version, use unsweetened light coconut milk, although the drink will be less rich and creamy.
π Serving Idea
Serve ice-cold with fresh lime slices and a little toasted unsweetened coconut around the rim for a tropical presentation. This makes a refreshing afternoon drink or a creamy accompaniment to grilled chicken, seafood, or other Latin-inspired dishes.
