Easy Keto Waffles
Makes: 6β8 waffles
Prep Time: 10 minutes
Cook Time: 15β20 minutes
Total Time: About 25β30 minutes
π₯£ Ingredients
- 2 cups almond flour
- 1 tbsp baking powder
- Β½ tsp sea salt
- 2 tbsp monk fruit sweetener
- 2 large eggs
- 1Β½ cups heavy cream
- β cup butter, melted and slightly cooled
- 1 tsp vanilla extract
- Butter or cooking spray, for greasing the waffle maker
π©βπ³ Directions
- Preheat the waffle maker
Preheat your waffle maker according to its instructions. Lightly grease it with butter or cooking spray. - Mix the dry ingredients
In a large bowl, whisk together the almond flour, baking powder, sea salt, and monk fruit sweetener. - Mix the wet ingredients
In a separate bowl, whisk the eggs, heavy cream, melted butter, and vanilla extract until smooth. - Combine
Slowly pour the wet mixture into the dry ingredients. Stir gently until everything is combined and you have a smooth, fairly thick batter. Donβt overmix. - Let the batter rest
Allow the batter to rest for 3β5 minutes. This gives the almond flour time to absorb some of the liquid. - Cook the waffles
Pour an appropriate amount of batter into the center of the preheated waffle maker. Close the lid and cook for approximately 3β5 minutes, or until the waffle is golden and releases easily. - Repeat
Continue with the remaining batter, lightly greasing the waffle maker between batches if needed. - Serve
Serve warm with your favorite keto toppings, such as sugar-free syrup, berries, whipped cream, butter, or peanut butter.
π‘ Tips
- Let the melted butter cool slightly before adding it to the eggs.
- Donβt open the waffle maker too early, as the waffles may break.
- For crispier waffles, let them cook a little longer after they are set.
- Keep finished waffles on a wire rack rather than stacking them immediately so they stay crisp.
