- 1 lb (450 g) smoked sausage or chicken sausage, sliced into rounds
- 2 cups broccoli florets
- 1 medium zucchini, sliced into half-moons
- 1 medium bell pepper, sliced
- 1 cup cauliflower florets
- ½ medium red onion, sliced thinly
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes, optional
- 1 tablespoon fresh lemon juice

1. Prepare the oven
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
2. Prepare the sausage and vegetables
Slice the sausage into bite-sized rounds. Cut the broccoli, cauliflower, zucchini, bell pepper, and onion into similarly sized pieces so they roast evenly.
3. Make the garlic-herb seasoning
In a small bowl, combine the olive oil, minced garlic, Italian seasoning, smoked paprika, oregano, salt, black pepper, and red pepper flakes if using.
Stir well to create a flavorful garlic-herb oil.
4. Season everything
Place the sliced sausage and vegetables onto the prepared baking sheet.
Pour the seasoned olive oil over everything and toss thoroughly until the sausage and vegetables are evenly coated.
Spread everything into a single layer. Avoid overcrowding the pan so the vegetables roast instead of steaming.
5. Roast
Bake for 15 minutes, then remove the pan and toss the sausage and vegetables.
Return to the oven and roast for another 10–15 minutes, or until the vegetables are tender with lightly browned edges and the sausage is heated through and nicely caramelized.
For extra browning, switch to broil for 1–2 minutes at the end, watching carefully.
6. Finish with lemon
Remove from the oven and drizzle with fresh lemon juice. Sprinkle with chopped parsley for freshness.
Toss lightly and serve hot.
