🧾 Ingredients
For the Chicken
- 2 large boneless, skinless chicken breasts
- 2 tsp dried oregano
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp garlic powder
- 1 tbsp olive oil
For the Blackberry Jalapeño Filling
- ½ cup fresh blackberries
- 1 small jalapeño, finely chopped and seeds removed for less heat
- 3 oz cream cheese, softened
- ½ cup shredded mozzarella cheese
- ¼ cup shredded Monterey Jack or cheddar cheese
- 1 tsp fresh lime juice
- Pinch of salt
Optional Topping
- 2 tbsp chopped fresh parsley
- A few fresh blackberries
- Thin jalapeño slices
- Small drizzle of sugar-free balsamic glaze, optional
👩🍳 Instructions
1. Prepare the chicken
Pat the chicken breasts dry with paper towels. Using a sharp knife, carefully cut a pocket horizontally through the thickest part of each breast. Don’t cut all the way through.
Season the outside and inside of the chicken with oregano, black pepper, salt, and garlic powder.
2. Make the filling
In a small bowl, combine the softened cream cheese, mozzarella, Monterey Jack or cheddar, chopped jalapeño, lime juice, and a small pinch of salt.
Gently fold in the blackberries. Try not to crush them completely—the small pieces of berry give the filling little bursts of sweetness.
3. Stuff the chicken
Carefully spoon the blackberry-jalapeño mixture into each chicken breast pocket.
Don’t overfill, or the cheese mixture may escape during cooking.
Secure the openings with toothpicks if needed.
4. Preheat the air fryer
Preheat the air fryer to 375°F (190°C) for about 3–5 minutes.
Lightly brush the stuffed chicken with olive oil.
5. Air fry
Place the chicken breasts in the air fryer basket in a single layer.
Cook at 375°F (190°C) for 18–22 minutes, depending on the thickness of the chicken.
Flip carefully halfway through cooking.
The chicken is done when the thickest part reaches 165°F (74°C) on an instant-read thermometer.
6. Rest before slicing
Remove the chicken from the air fryer and let it rest for 5 minutes. This allows the juices to redistribute and gives the melted filling time to settle.
Remove the toothpicks before serving.
