Take avocado and egg and turn them into a soft, savory bread alternative! This easy recipe is naturally filling and works beautifully for breakfast, sandwiches, or as a low-carb side.
🥣 Ingredients
- 2 ripe avocados
- 2 large eggs
- ½ cup almond flour
or use coconut flour for a slightly different texture - ¼ cup shredded cheese — cheddar, mozzarella, or Parmesan
- ¼ cup spinach or finely chopped kale, optional
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon baking powder

1. Prepare the avocado
Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash thoroughly with a fork until mostly smooth.
2. Add the eggs
Crack in the eggs and whisk together with the mashed avocado until well combined.
3. Add the dry ingredients
Add the almond flour, shredded cheese, baking powder, garlic powder, salt, and black pepper. Mix until you have a thick, cohesive batter.
If using spinach or kale, fold it in at this stage.
4. Adjust the texture
Let the mixture sit for about 2–3 minutes so the almond flour can absorb some moisture. The batter should be thick enough to scoop and spread.
If it seems too wet, add another tablespoon of almond flour.
5. Shape the bread
Line a baking sheet with parchment paper. Divide the mixture into 4–6 portions and shape each into a small, flat round or oval.
Keep them around ½ inch thick so they cook evenly.
6. Bake
Preheat the oven to 375°F (190°C).
Bake for approximately 15–20 minutes, or until the edges are lightly golden and the centers are set.
For a slightly crispier exterior, broil for 1–2 minutes at the end, watching carefully.
7. Cool and serve
Allow the avocado bread to cool for 5–10 minutes before removing it from the parchment. This helps it firm up.

- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in an air fryer or toaster oven for better texture.
