🧾 Ingredients
For the Pasta
- 8 oz (225 g) high-protein or chickpea pasta
- 1 lb (450 g) lean ground beef, preferably 90–95% lean
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup baby spinach
- ½ cup low-sodium beef broth
- ½ cup plain nonfat Greek yogurt
- ¼ cup light cream cheese
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- ¼–½ tsp salt, to taste
- 1 tsp olive oil, if needed
- ¼ cup chopped fresh parsley, optional
👩🍳 Instructions
1. Cook the pasta
Bring a large pot of salted water to a boil.
Cook the high-protein pasta according to the package directions until al dente. Reserve about ½ cup of the pasta water, then drain.
Don’t overcook the pasta because it will continue cooking slightly when added to the sauce.
2. Brown the beef
Heat a large skillet over medium-high heat.
Add the lean ground beef and cook for about 5–7 minutes, breaking it apart with a wooden spoon.
Cook until browned and no longer pink. Drain excess fat if necessary.
3. Add the vegetables
Add the diced onion and mushrooms to the skillet.
Cook for 3–4 minutes, stirring occasionally, until the onion softens and the mushrooms begin to brown.
Add the minced garlic and cook for another 30–60 seconds.
4. Season
Add Italian seasoning, smoked paprika, garlic powder, black pepper, and salt.
Stir well so the seasonings coat the beef and vegetables.
5. Make the creamy sauce
Reduce the heat to low.
Pour in the beef broth and stir, scraping up any browned bits from the bottom of the skillet.
Add the cream cheese and stir until melted and smooth.
Turn the heat very low or off before adding the Greek yogurt. Stir it in gradually so it creates a creamy sauce without becoming grainy.
6. Add the spinach
Stir in the baby spinach and cook for 1–2 minutes, just until wilted.
Add the Parmesan and stir until incorporated.
7. Combine with the pasta
Add the cooked pasta to the skillet and toss everything together.
If the sauce is too thick, add a tablespoon or two of the reserved pasta water until you reach your preferred creamy consistency.
8. Serve
Divide into 4 portions and garnish with fresh parsley and a small sprinkle of Parmesan.
Serve immediately.
