Ingredients
- 1 cup finely ground almond flour
- 2 tablespoons coconut flour
- 1 cup fresh spinach, finely chopped
- ½ cup full-fat cottage cheese
- 2 large eggs
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon baking powder
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup unsweetened almond milk or another low-carb milk
- 1 tablespoon butter or avocado oil, for cooking
Directions
- Prepare the spinach: Finely chop the spinach, parsley, chives, and dill. Set aside.
- Blend the wet ingredients: Add the cottage cheese, eggs, and almond milk to a blender. Blend until mostly smooth and creamy.
- Combine the dry ingredients: In a large bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, salt, and black pepper.
- Make the batter: Pour the blended cottage-cheese mixture into the dry ingredients. Add the chopped spinach and fresh herbs. Stir gently until everything is evenly combined.
- Rest the batter: Let the batter sit for about 3–5 minutes. Coconut flour absorbs liquid as it sits, so the mixture will thicken slightly.
- Adjust the consistency: If the batter becomes too thick to spoon easily, add 1 tablespoon of almond milk at a time until it reaches a thick but pourable consistency.
- Heat the pan: Place a nonstick skillet or griddle over medium-low to medium heat. Lightly grease it with butter or avocado oil.
- Cook the pancakes: Scoop about 2–3 tablespoons of batter into the pan for each pancake. Gently spread into a small round.
- Flip: Cook for about 2–3 minutes, or until the edges look set and the bottom is golden. Carefully flip and cook another 1–2 minutes until cooked through.
- Repeat: Continue with the remaining batter, adding a little more butter or oil to the pan as needed.
