🥕 8. Carrot Cake Energy Balls

  5. Roll each ball in extra shredded coconut.
  6. Refrigerate for 30–60 minutes to firm up.
  7. Keep refrigerated and enjoy as a naturally sweet snack.

⭐ Storage

Most of these energy balls will keep well in the refrigerator for 5–7 days in an airtight container. They can also be frozen for about 1–2 months; thaw them in the refrigerator before eating.

Note: These are not all keto or low-carb—the oats, dates, honey, maple syrup, and dried fruit make several of them relatively carbohydrate-rich. The protein-packed version is the most suitable of these if your goal is a higher-protein snack.
