One-Pan Creamy Protein Chicken & Veggie Meal

Cook Time: 10–12 minutes

Ingredients

  • 1 cup diced chicken breast or turkey
  • ½ cup broccoli florets
  • ¼ cup diced bell pepper
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp plain Greek yogurt
  • 1–2 tbsp low-fat milk or water, as needed
  • 1 tbsp grated Parmesan (optional)
  • ½ tsp lemon juice (optional)
  • Fresh parsley or chili flakes, for topping (optional)

Directions

  1. Season the chicken:
    Add diced chicken to a bowl and season with garlic powder, smoked paprika, salt, and black pepper.
  2. Cook the chicken:
    Heat 1 tsp olive oil in a nonstick skillet over medium-high heat. Add the chicken and cook for 4–5 minutes, stirring occasionally, until browned and cooked through.
  3. Add the vegetables:
    Add broccoli and bell pepper. Cook for another 3–4 minutes until the vegetables are tender-crisp. Add a splash of water and cover for 1–2 minutes if you prefer softer broccoli.
  4. Make it creamy:
    Reduce the heat to low. Mix the Greek yogurt with 1–2 tbsp milk or water until smooth. Add it to the pan and stir gently until everything is coated. Do not boil, as Greek yogurt can separate.
  5. Finish:
    Stir in Parmesan and lemon juice if using. Cook for about 30–60 seconds, then remove from heat.
  6. Serve:
    Garnish with parsley or a pinch of chili flakes and serve immediately.
