🛒 Ingredients
For the Beef & Vegetables
- 1½ lb (680 g) beef sirloin or tenderloin, cut into 1–1½-inch cubes
- 1 medium bell pepper, cut into chunks
- 1 small zucchini, sliced into thick rounds
- ½ medium red onion, cut into chunks
- 8–10 cherry tomatoes, optional
- Wooden or metal skewers
For the Keto Marinade
- 3 tbsp olive oil
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp lemon juice
- 1 tbsp Worcestershire sauce
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- ½ tsp onion powder
- ½ tsp black pepper
- ¼ tsp salt, or to taste
- ¼ tsp red pepper flakes, optional
👩🍳 Instructions
- Prepare the beef:
Pat the beef cubes dry with paper towels and place them in a large bowl. - Make the marinade:
Whisk together olive oil, soy sauce, lemon juice, Worcestershire sauce, garlic, smoked paprika, Italian seasoning, onion powder, black pepper, salt, and red pepper flakes. - Marinate:
Pour the marinade over the beef and toss well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor. - Prepare the vegetables:
Cut the peppers, zucchini, and onion into pieces similar in size to the beef. - Assemble the kabobs:
Thread the beef and vegetables onto skewers, alternating between the ingredients. - Grill:
Preheat the grill to medium-high heat. Lightly oil the grates. Grill the kabobs for about 3–4 minutes per side, turning regularly, until the beef reaches your preferred doneness. - Oven method:
Preheat the oven to 425°F (220°C). Place the kabobs on a foil-lined baking sheet or wire rack. Bake for about 12–15 minutes, turning halfway through. For extra browning, broil for 1–2 minutes at the end while watching closely. - Rest & serve:
Let the kabobs rest for 5 minutes before serving. Spoon any remaining cooked juices over the top.
💡 Keto Tips
- Use sirloin, ribeye, or tenderloin for tender kabobs.
- Keep vegetables keto-friendly such as zucchini, bell pepper, mushrooms, and onion in moderate amounts.
- For a creamy dipping sauce, serve with garlic Greek yogurt sauce or keto ranch.
- Avoid sweet BBQ sauces or sugary marinades to keep the recipe low-carb.
🔥 Tip: Don’t overcook the beef—kabobs cook quickly, and removing them from the heat when just done helps keep them juicy.
