High-Protein Apple Oatmeal Pancakes

Soft, naturally sweet apple oatmeal pancakes made with eggs, Greek yogurt, and oats. They’re higher in protein than the original version, contain no added sugar, and make a satisfying breakfast without needing syrup.
🛒 Ingredients
- ½ cup rolled oats or quick oats
- 1 medium apple, grated
- 2 large eggs
- 200 g plain Greek yogurt
- ½ scoop vanilla protein powder, optional
- 1 tsp baking powder
- ½ tsp cinnamon
- ½ tsp vanilla extract
- Pinch of salt
- 1–2 tbsp milk, only if needed
- Cooking spray or a small amount of oil for the pan
👩🍳 Instructions
1. Prepare the apple
Wash and grate the apple using the large holes of a grater. If it releases a lot of liquid, gently squeeze out some—but not all—of the juice. The apple provides natural sweetness and moisture.
2. Make the batter
In a large bowl, whisk the eggs and Greek yogurt until smooth. Add the grated apple and vanilla.
3. Add the dry ingredients
Stir in the oats, protein powder if using, baking powder, cinnamon, and salt. Mix until everything is well combined.
4. Rest the batter
Let the mixture sit for 5–10 minutes. The oats will absorb some of the moisture and the batter will become thicker.
If it becomes too thick, stir in 1 tablespoon of milk at a time until you have a thick pancake batter.
5. Cook the pancakes
Heat a nonstick skillet over medium-low heat and lightly coat it with cooking spray or a little oil.
Spoon about 2–3 tablespoons of batter into the pan for each pancake. Gently spread into a small round.
6. Flip carefully
Cook for about 2–3 minutes, until the bottom is golden and the edges look set. Flip gently and cook another 1–2 minutes until cooked through.
Because of the apple and yogurt, these pancakes are softer than traditional pancakes, so medium-low heat works best.
7. Serve
Serve warm with a spoonful of Greek yogurt and a sprinkle of cinnamon.

For a weight-loss-friendly option, try:
- Greek yogurt
- Fresh berries
- A few chopped walnuts
- Cinnamon
- Thinly sliced fresh apple
- 1 teaspoon natural peanut or almond butter
Avoid regular syrup if you’re trying to keep the recipe no-added-sugar.

Using Greek yogurt and ½ scoop protein powder, the full batch is approximately 450–500 calories and 35–40 g protein, depending on the specific brands used. Divide into 2 servings for a filling breakfast.
Note: This is lower-carb than the original recipe, but it is not a strict low-carb or keto recipe because oats and apples still contribute carbohydrates.
