In a bowl, mix almond flour, protein powder, baking powder, cinnamon, and salt. - Make the batter:
Pour the blended cottage cheese mixture into the dry ingredients. Add vanilla extract if using. Stir gently until just combined. - Adjust the consistency:
Let the batter rest for 2β3 minutes. Protein powder and almond flour will thicken it. If it becomes too thick, add almond milk 1 tablespoon at a time. - Heat the pan:
