  3. Make the batter:
    Pour the blended cottage cheese mixture into the dry ingredients. Add vanilla extract if using. Stir gently until just combined.
  4. Adjust the consistency:
    Let the batter rest for 2–3 minutes. Protein powder and almond flour will thicken it. If it becomes too thick, add almond milk 1 tablespoon at a time.
  5. Heat the pan:
    Place a nonstick skillet over low to medium-low heat and lightly grease it with butter or avocado oil.
  6. Cook the pancakes:
    Pour about ΒΌ cup batter for each pancake. Cook for approximately 2–3 minutes, until the edges look set and bubbles begin appearing on the surface.
  7. Flip carefully:
    Gently flip and cook for another 1–2 minutes, until golden and cooked through.
