Chicken
- 1 whole chicken, about 3–3½ lbs, cut into 8 pieces
- 1 tsp salt
Keto Seasoned Coating
- 2 cups finely ground almond flour
- ¼ cup coconut flour
- 1½ tbsp garlic powder or garlic salt
- 1 tbsp paprika
- 1 tbsp black pepper
- ½ tsp poultry seasoning
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp cayenne pepper, optional
Keto Batter
- ½ cup finely ground almond flour
- 2 tbsp coconut flour
- 2 large egg yolks
- ¾ cup unsweetened sparkling water
- ½ tsp salt
- ¼ tsp black pepper
For Frying
- 1–1½ quarts avocado oil or another keto-friendly frying oil, as needed

1. Prepare the chicken
Pat the chicken pieces very dry with paper towels. Season lightly with 1 teaspoon salt and let them sit for about 10–15 minutes.
2. Make the keto coating
In a large bowl, combine the almond flour, coconut flour, garlic seasoning, paprika, black pepper, poultry seasoning, onion powder, salt, and cayenne.
Whisk thoroughly so the seasonings are evenly distributed.
3. Prepare the batter
In another bowl, whisk together the almond flour, coconut flour, egg yolks, salt, and black pepper.
Slowly whisk in the cold sparkling water until you have a thick but pourable batter. Add another tablespoon or two of sparkling water if needed.
4. Coat the chicken
Working with one piece at a time, dip the chicken into the seasoned almond-flour mixture and coat well.
Shake off excess coating, then dip the chicken into the keto batter.
Allow the excess batter to drip off, then return the chicken to the seasoned coating. Press the coating gently onto the chicken so it sticks well and forms a rough, crispy exterior.
5. Heat the oil
Heat the oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C).
Use enough oil to generously surround the chicken pieces, but never fill the pot more than halfway.
6. Fry the chicken
Carefully lower the chicken into the hot oil in batches. Avoid overcrowding the pot, which can cause the oil temperature to drop.
Fry for approximately 12–18 minutes, depending on the size of the pieces, turning occasionally for even browning.
The coating should be deeply golden and crisp.
7. Check for doneness
Use an instant-read thermometer inserted into the thickest part of the chicken without touching the bone.
The chicken should reach 165°F (74°C) internally.
8. Drain and rest
Transfer the chicken to a wire rack set over a baking sheet. Allow it to rest for 5 minutes before serving.
The elevated rack helps prevent the bottom crust from becoming soggy.
