🛒 Ingredients
For the Pork
- 2–3 lb pork shoulder or pork butt
- 1 cup sugar-free BBQ sauce
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar substitute, such as allulose or a keto brown sweetener
- 1 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp ground cumin
- ½ cup low-sodium chicken broth
- 2 cloves garlic, minced

1. Prepare the pork
Pat the pork shoulder dry with paper towels. Trim away any very thick or hard pieces of excess fat, leaving some fat for flavor and moisture.
2. Make the dry rub
In a small bowl, combine the brown sugar substitute, smoked paprika, garlic powder, onion powder, chili powder, salt, black pepper, and cumin.
Rub the mixture generously over every side of the pork.
3. Add the pork to the slow cooker
Place the seasoned pork shoulder into a slow cooker. Add the minced garlic and chicken broth around the meat.
4. Make the BBQ mixture
In a bowl, whisk together the sugar-free BBQ sauce, apple cider vinegar, and olive oil.
Pour about ¾ of the sauce over the pork, reserving the rest for serving.
5. Slow cook
Cover and cook on LOW for 7–8 hours, or until the pork is very tender and easily pulls apart with a fork.
Avoid repeatedly opening the lid because this allows heat to escape and can increase the cooking time.
6. Shred the pork
Transfer the cooked pork to a large bowl or cutting board. Let it rest for about 5–10 minutes, then shred it using two forks.
Discard any large pieces of fat or connective tissue.
7. Add the BBQ sauce
Return the shredded pork to the slow cooker. Stir it into the flavorful cooking juices.
Add the remaining BBQ sauce and toss until everything is evenly coated.
8. Finish and serve
Cover and cook on LOW for another 10–15 minutes so the shredded pork absorbs the BBQ flavor.
