High-Protein Low-Carb Cheddar Soup
Creamy, cheesy, satisfying, and packed with protein — without the flour or regular milk.
Ingredients
- 1 tsp olive oil or butter
- ½ small onion, finely diced
- 1 celery stalk, finely chopped
- 2 cups low-sodium chicken broth
- 1 cup unsweetened almond milk
- 1 cup low-fat cottage cheese
- ¾ cup sharp cheddar cheese, freshly shredded
- ½ cup plain nonfat Greek yogurt
- 1 cup cooked shredded chicken breast
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
- ¼ tsp xanthan gum, optional
Instructions
- Heat the oil or butter in a pot. Add onion and celery and sauté for 4–5 minutes.
- Add chicken broth and almond milk. Simmer for 8–10 minutes.
- Blend the cottage cheese until completely smooth.
- Lower the heat and stir the blended cottage cheese into the soup.
- Add Dijon mustard, garlic powder, paprika, salt, and pepper.
- Gradually add the shredded cheddar, stirring until melted.
- Stir in the cooked shredded chicken.
- Turn the heat to low and gently stir in the Greek yogurt. Don’t boil, or the yogurt may separate.
- If you want it thicker, sprinkle in xanthan gum gradually while whisking.
- Simmer gently for another 1–2 minutes, then serve.
