Grandma’s Secret Chicken Avocado Salad
Creamy avocado, juicy chicken, sweet corn, crunchy chips, and a flavorful dressing — an easy salad you’ll want to make again and again!
Ingredients
For the Salad
- 2 cups cooked chicken breast, diced or shredded
- 1 ripe avocado, diced
- ¾ cup corn, drained
- ½ cup cherry tomatoes, halved
- ¼ cup finely diced red onion
- 2 cups chopped lettuce
- ½ cup tortilla chips, lightly crushed
- ¼ cup shredded cheddar cheese, optional
- 2 tbsp fresh cilantro or parsley, chopped
For the Dressing
- ½ cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp fresh lime juice
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 1–2 tbsp water, as needed to thin
Instructions
- Prepare the chicken:
Use cooked, cooled chicken breast. Dice or shred it into bite-sized pieces. - Make the dressing:
Whisk together Greek yogurt, mayonnaise, lime juice, Dijon mustard, garlic powder, paprika, salt, and pepper. Add a little water if you prefer a thinner dressing. - Build the salad:
Add lettuce, chicken, corn, avocado, tomatoes, red onion, and cilantro to a large bowl. - Add the dressing:
Pour the dressing over the salad and gently toss until everything is evenly coated. - Add the crunch:
Crush the tortilla chips into bite-sized pieces and sprinkle them over the salad right before serving so they stay crunchy. - Finish:
Add shredded cheddar if desired and a squeeze of fresh lime.
💪 High-Protein / Low-Carb Option
For a higher-protein, lower-carb version, use extra chicken, reduce the corn and tortilla chips, and use Greek yogurt as the main dressing base. You can also replace the chips with toasted low-carb tortilla pieces for crunch.
Tip: If preparing ahead, keep the avocado, dressing, and chips separate and combine them just before eating.
