Keto Almond Flatbread

Soft, flexible, low-carb flatbread made with almond flour and psyllium husk — perfect for wraps, sandwiches, dipping, or serving alongside your favorite meal.

Ingredients

  • 1 cup almond flour
  • 2 tbsp psyllium husk powder
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ cup hot water
  • 1 tsp olive oil, optional, for a softer texture

Instructions

  1. Mix the dry ingredients:
    In a medium bowl, combine almond flour, psyllium husk, salt, and baking powder. Mix thoroughly so everything is evenly distributed.
  2. Add the water:
    Slowly pour in the hot water while stirring continuously. Add the optional olive oil.
  3. Form the dough:
    Mix until a soft dough forms. Knead gently with your hands for about 1–2 minutes.
  4. Let it rest:
    Allow the dough to rest for 5–10 minutes. The psyllium husk will absorb the water and make the dough easier to handle.
  5. Divide:
    Divide the dough into 4–6 equal portions, depending on how large you want your flatbreads.
  6. Roll out:
    Place one dough ball between two sheets of parchment paper. Roll it into a thin, even circle. Repeat with the remaining dough.
  7. Heat the skillet:
    Heat a nonstick skillet over medium heat. You don’t need much oil.
  8. Cook:
    Carefully place one flatbread into the skillet. Cook for about 1–2 minutes per side, or until lightly golden and cooked through. Avoid very high heat because the almond flour can brown quickly.
  9. Keep them soft:
    Transfer cooked flatbreads to a clean plate and cover them with a clean kitchen towel while you cook the rest.
  10. Serve:
    Use them as wraps, sandwich bread, taco shells, or alongside chicken, eggs, vegetables, or dips.

💡 Tips

  • If the dough feels too dry or cracks, add a teaspoon of hot water at a time.
  • If it feels too sticky, let it rest a few more minutes before rolling.
  • Roll them thinner for a crispier flatbread or slightly thicker for a soft wrap.
  • Store leftovers in an airtight container in the refrigerator for 3–4 days.
