Creamy Vanilla Happiness

Smooth, creamy, vanilla-rich, and naturally sugar-free — an easy dessert for when you want something sweet without regular sugar.

Ingredients

  • 1 cup full-fat Greek yogurt
  • ½ cup cottage cheese, blended smooth
  • ¼ cup heavy cream
  • 2–3 tbsp powdered monk fruit sweetener, to taste
  • 1 tsp vanilla extract
  • ½ tsp vanilla bean paste, optional
  • Pinch of salt
  • 1 tbsp unsweetened almond milk, if needed

Instructions

  1. Add the Greek yogurt, blended cottage cheese, heavy cream, monk fruit sweetener, vanilla extract, vanilla bean paste, and salt to a blender.
  2. Blend for 30–60 seconds, until completely smooth and creamy.
  3. If the mixture is too thick, add almond milk 1 tablespoon at a time.
  4. Taste and adjust the sweetness and vanilla.
  5. Transfer to small dessert cups.
  6. Refrigerate for at least 1 hour to let it become thicker and colder.
  7. Serve chilled with a little cinnamon, fresh berries, or a few chopped nuts if desired.
